This coffee is harvested December-April with cherries arriving at the mill and being processed same-day. Cherries are dried on patios for seven days and turned and sorted regularly to promote even drying and to avoid fermentation. This natural coffee is left with notes of toasted almond and forest fruits, giving a nod to the humble Bakewell Tart .Â
The farm itself spans six hectares of the Tarbaca region, and produces 250 fanegas (each is approx. 46kg) of coffee. Don Jorge, the founder, sadly passed away during the Covid-19 pandemic but the farm has carried on under the keen eyes of his children, Daniel and Maria. The farm employs two full time workers and a further 25 collectors visit the farm during harvest season.Â
The farm is part of the Association of Agricultural Producers of Acosta and Asseri (or, ASOPROAAA), which was set up in 1998 following the devastation caused by Hurricane Mitch. The cooperative has been instrumental in rejuvenating the growing of crops such as coffee and citrus fruits in the area and a pioneer in the processing of micro lots by its members. ASOPROAAA provides financial, commercial and technical assistance to its members and has been responsible for the building of over 2000 houses for communities within its reach.Â
